As at Domaine de St. Quentin, farmers throughout this region perform the painstaking work of cutting, mixing and binding the flowers which have been made fertile by the honeybees. In the old days, portable distillers went from farm to farm on the backs of mules. Dried hay is lit beneath the distillation vats, and at one sensual moment the extract is separated from the water before the precious liquid slowly flows out, Essence de Lavandin.
